Finca is a Spanish word for farm and pays homage to Chef Dannyʻs culinary roots back in Costa Rica, a tropical paradise similar to Kaua'i, where he lived for eight years. Makaleha is the majestic mountain range on the eastern side of Kaua‘i that borders the farmland where Chef Danny lives and grows many of the ingredients he cooks with. Both places have influenced his culinary career and continue to inspire his cooking. Chef Danny’s story is an interesting one. Raised along the coastal waters of northern Florida, he began working in the restaurant industry at the age of 14 and his strong work ethic earned him many advances throughout his early years. At the end of the summer of 1999 he embarked on a backpacking trip to Costa Rica, Peru and Europe, which would change the course of his life forever. Before he returned home to Florida he had made up his mind to move to Costa Rica. Something about the good natured people and high quality of life there beckoned him… And so, with his dog and a small bag of belongings he moved to the small beach town of Santa Teresa on the Nicoya Peninsula.
